I was very curious to know this restaurant, at the stunning Edition Hotel in South Beach. So, recently I had a dinner there.

It was a very nice experience. Matador Room is a gorgeous indoor/outdoor dining venue serving up Jean-Georges’ small plates that are meant for people to share. Jean-George Vongerichten is one of the world’s famous chefs and he presents a modern interpretation of Latin cuisine influenced by Spanish, Caribbean and South American flavors.

The ambience is fancy, the food is very good as well as the service but the star of the restaurant is The Pineapple. It’s a fabulous drink which is served in a stunning and quite massive copper pineapple. Inside, a combination of Elyx, Palo Cortado Sherry (an intermediate sherry that’s full and deep yet still floral), salted caramel bitters, Bittermens Elemakule tiki bitters (blend of cinnamon, allspice and island spices), and house-made pineapple and rosemary syrup, is poured over crushed ice. A torched sprig of rosemary is paired with a slice of dehydrated pineapple and the cocktail is then covered until it reaches the guest. When the lid is removed, the distinct aromas fill the dining room. Yeah, it’s awesome! And it’s my new fave drink!

Make sure to put this place on your must to go list in your next trip to Miami.
