EGGPLANT BURGER BUN
What to do when you're dying to eat burger but you're on a low carb diet? It’s simple: Eggplant burger bun!
And, to side your burger, you can make the Zucchini crisps that I taught here, these days.
Recipe: Eggplant Burger Bun
Course: Lunch, Dinner.
Servings: 2 burgers
Cooking Time: 18 minutes
Preparation Time: 5 minutes
Total Time: 23 minutes
- 1/4 teaspoon olive oil
- 1 small eggplant; sliced 1/2" thick
- 1/4 teaspoon salt
- 1/4 teaspoon pepper ( or a seasoning of your choice)
1- Preheat the oven to 400 degrees F. Coat a baking sheet with coconut oil
2- Season the eggplant slices with olive oil, salt and pepper.
3- Arrange the eggplant slices on the baking sheet
4- Roast for 9 minutes.
5- After 9 minutes, flip each eggplant piece over.
6- Return to the oven to roast for another 9 minutes or until cooked and crispy.
7- Transfer to a plate and use as the "buns" to your favorite slider recipe
I made mine with turkey, feta and spinach burger, onions, mushrooms, tomatoes, cheese, green leaves and turkey bacon! It was yummy!
